Easy and cheap to make, but never does fail to impress.


  • 220g butter/margarine
  • 220g sugar
  • 4 eggs
  • 250g plain flour
  • 3 tbsp of milk
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 1 tsp lemon zest or lemon juice

  1. Pre-heat oven on 180 degrees.
  2. Beat butter/margarine with sugar.
  3. Add 4 eggs, flour, milk, baking powder, vanilla and beat the mix with the hand mixer.
  4. Add lemon zest or lemon juice. Mix it again.
  5. Lay baking paper in the baking dish, and add mix.
  6. Bake it for 45-50min.

Do not leave cake baking on a high heat as it will burn the top before cake has been baked.

Easy, Effortless & Low-Cost

  • 500g pasta
  • 1 onion
  • 2 carrots
  • 2 courgettes
  •  2 cans of tomatoes
  • 150g grated cheese


  1. Boil water for pasta in kettle.
  2. Peel and chop onion, carrots and courgettes, and  fried it in the pan with olive oil for 10-15min on a low heat, add pepper and salt or any other seasoning.
  3. Add canned tomatoes and leave it to on a medium heat until it will boil.
  4. Drain pasta, add grated cheese and mix it with together until cheese has evenly melt.
  5. Once the vegetables and tomatoe sauce is hot and boiling, switch the heat off, and add sauce into pasta pot and mix it with the pasta.

I recommend to eat pasta with green and fresh vegetables or salad.

The reason why I wanted to share this recipe is for you to see how easy is to make a cheesecake: I broke down steps of the baking process in the most time-consuming way possible.

As you can see, the ingredients are very basic and easy to be bought in any supermarket.


I made this cheesecake so many times – I tried different variation and after many tests I found this particular recipe to be the best one. Other thought so too.

This was always a winner at my work charity Cake Sales. Have fun!


  • 80g butter melted
  • 200g digestive biscuits


  • 900g of soft cheese
  • 200g caster sugar
  • 3 tbsp plain flour
  • 1½ tsp vanilla extract
  • finely grated zest of ½ lemon
  • 3 large eggs
  • 200g of blueberries


  1. Crush biscuits for the base: I add biscuits in a big bowl and using a heavy glass and I crush biscuits to crumbles.
  2. I melt butter in the bowl in microwave for 1min.
  3. I mix butter and biscuits.
  4. Lay baking paper in the baking dish.
  5. Move biscuits mix into the baking dish and even all to one level with the glass.
  6. Pre-heat oven on a medium heat 180 degrees.
  7. Add soft cheese, sugar, flour, vanilla extract, grated zest of lemon and eggs into a bowl and using hand-mixer beat all ingredients until mix is smooth and lump-free.
  8. Add blueberries – these cannot be beaten with hand-mixer but it will melt/turn into a gem during baking process.
  9. Add cheesecake filling mix on a top of the biscuit base.
  10. Bake cheesecake for 45-50min. I check cheesecake after 35min and then 10-15min afterwards. I use toothpick to check if cheesecake is done – simply stick toothpick in filling and see if it comes out clean (that means it is done) if not, bake it for a bit longer.
  11. Once it has been done, leave it to cool it down. TIP – for a quick cool-down you can leave cooled down cheesecake in the freezer for 20-30min.

Heavenly Tasty Buttercream Frosting Recipe

IMG_20150302_181728 (2) Have you been dreaming to make heavenly-tasting pretty cupcakes? Did you have much luck with it?
Well, the secret to these amazing cupcakes I keep referring to, is a frosting. Not a base but frosting. It is because to make a base is a pretty much basic baking job: mix this and that, put in the oven, 15-20min later and cupcakes base is ready.
There is so much more work and skill that needs to go into making beautiful frosting crowns for the cupcakes.

Why cupcakes? Well, we just love these tiny cakes with pretty crowns that make our jaws drop.

I don’t like word ‘complicated’. So, when I struggled with all this technicality of making perfect buttercream frosting for my cupcakes, I tried to simplify and make easy-to-follow steps to reach your dream to becoming Cupcakes Queen.

You need 3 simple ingredients:

• 140g butter
• 280g icing sugar
• 5-7 tablespoon milk


1. Add butter and icing sugar in the bowl.
2. Add 2-3 tablespoons of milk and start beating mixture with the hand-mixer.
3. Add extra few spoons of milk and continue beating the mixture until smooth and creamy.
4. Keep an eye on the mixture and add a bit extra milk if needed but do not over-do it.
5. Cut the end of piping bag and add chosen piping nozzle
6. Get a tall glass/small vase/or tall mug to put your bag in.
7. Fill bag with the frosting mixture
8. Start piping frosting on your cupcakes.

  • 100g butter
  • 150g good plain dark chocolate
  • 1 teaspoon strong instant coffee
  • 1 teaspoon vanilla extract
  • 100g caster sugar
  • 4 eggs, separated
  • icing sugar for decorating                                                                                                                                                  


  1. Separate egg yolks from egg whites (beat all 4 eggs into a bowl, then gently scoop it out egg yolks with the tablespoon and place it in separate bowl).
  2. Beat egg yolks, and whisk egg whites with electric hand mixer until fluffy and light.
  3. Boil water in the kettle and pour it the saucepan and keep it over medium heat.
  4. Put chocolate and butter into heatproof bowl and place it over the saucepan (make sure the bottom of the bowl does not touch the water).
  5. Stir melted chocolate and butter until smooth mix, then add coffee, vanilla extract, sugar, beaten egg yolks. Continue stirring.
  6. Add spoon by spoon whisked egg whites. Use electric mixer to evenly incorporate egg whites and smooth the mixture.
  7. Preheat oven: put the oven to 180 degrees.
  8. Cut a piece of baking paper big enough to cover the entire baking tin right upto the top.
  9. Spoon the mixture into the prepared tin and evenly spread all over the baking paper.
  10. Bake it for 35min – brownie mixture will be spongy and puffy while baking.
  11. Take tin out of the oven and leave it to cool (as soon as you will remove baked brownies out of the oven it will loose the body by half of the size). Remove baking paper with brownies out of the tin for a faster cooling.
  12. Decorate with sugar powder and cut in even pieces.
